Easy, delicious homemade granola
Stuck at home on a cold afternoon, I wanted to make something interesting to keep my mind busy. I thought of granola, having recently read a lovely post by fellow blogger and friend Mondo Mulia. I decided, mainly for lack of ingredients, to pick and mix though. I used her recipe as a base, then browsed around the web, finally opened my cupboard and went for it.
It’s a fun recipe to make: quite an interesting process (as you take it out of the oven and think ‘oh my gosh, it’s soft!’) and it is very satisfactory to open the jar the next morning and think ‘I made this!’.
Besides, you can control how much oil you use and you do not run the risk of eating palm oil. That’s the main reason for me not to buy shop granola, of course.

The recipe
- 100gr golden syrup
- 50gr single origin honey
- 300gr plain oats
- 3 tablespoons groundnut oil (rapeseed or coconut would work too)
- 1 teaspoon ground cinnamon
- 1 teaspoon ground coffee
- 1 teaspoon vanilla extract
- 30gr mixed seeds
- 80gr almonds unpeeled and crushed
- 100gr dry fruit (I used raisins)
- 35gr dry coconut flakes
Homemade granola method
Mix the honey (runny), the golden syrup, the oil and the vanilla extract in a large bowl. Add the oats and mix well ensure they are coated as much as you can. Add a bit more oil or honey in case you feel it’s too dry.
Add all other ingredients except the fruit and the coconut and mix well.
Spread the whole lot evenly on a baking tray lined with silicon mat and bake at 160c (fan) for 15 minutes. At this point sprinkle the coconut and the fruit on top and bake for a further 15 minutes.
Let it cool and store in a jar or air tight container. It should keep for a couple of weeks – but I doubt it will last that long!


How to serve it
Homemade granola is perfect in a bowl of fresh yogurt with fruit compote. You can also follow my recipe to make your own yogurt at home!
